Apple Pie Filling (Cooked Fruit Method)

 Ingredients

Apples

Sugar

Butter

Corn Starch

Water

Cinamon

Nutmeg

Limon Juice

Salt

Procedure

Cut the apples in 1" chunks

Heat the pot on high

In the meantime, make a slurry with CS and H2O

When pot is hot, add apples, stir and cook until there's some browning (1:30)

Add first batch of sugar and butter and cook for about 3-4 minutes

When the apples are partially cooked, add the slurry and cook stirring for about 2 minutes until the starch cooks

Add the rest of the ingredients and turn the heat off

Stir for a minute

Transfer to a bowl, making sure to scrap the pot and get all the juices

Cover the bowl and pierce the wrap so it doesn't sweat. Refrigerate





Notes

Granny apples hold their shape when baked

First sugar will extract water from the apples

Cook the apples until the chunks are cooked on the outside but the inside is still crispy

Once the slurry and spices are added, the apples will stop cooking
