Baked Chocolate Ganache
Method
- Boil the milk and cream
- Pour over chocolate and stir
- Once the mix has cool down to under 65º, eggs can be added
- Add eggs and combine
- The ganache is ready to use
Notes
- Once the ganache is bubbling, it would be safe the ganache/eggs are cooked
- The dairy is boiled the ganache wouldn't boil in the oven as moisture will be released
- It's better to use use/bake the ganache right away. It can be refrigerated and used next day, but it won't bake evenly
