Baked Chocolate Ganache

 Method

  1. Boil the milk and cream
  2. Pour over chocolate and stir
  3. Once the mix has cool down to under 65º, eggs can be added
  4. Add eggs and combine
  5. The ganache is ready to use


Notes

  • Once the ganache is bubbling, it would be safe the ganache/eggs are cooked
  • The dairy is boiled the ganache wouldn't boil in the oven as moisture will be released
  • It's better to use use/bake the ganache right away. It can be refrigerated and used next day, but it won't bake evenly
