Chocolate Cream Pie Decoration
Method
- Cover the filling with Chantilly Cream (try to avoid the crust)
- Don't be concerned about the edge of the decoration as it will be piped over
- With a #5 star tip, pipe some "9 shape rosettes" around the edge
- Decorate the middle of the pie with chocolate shavings
Notes:
- Neutral fond will prevent Chantilly from loosing volume
