GF Vegan Cherry Pie Filling

Info:
To be made with a jar of Sour Cherries. The weight of the drained juice will determine the quantity of the cornstarch and sugar (10% each)

Ingredients:
Sour Cherry Juice  100%
Cornstarch          10%
Sugar               10%
Sour Cherries
Citrus Fiber        1g
LBG                 1g
(CF abd LBG will help in keeping the filling consistency when defrosted)

Method:
  1. Boil juice
  2. In the meantime, combine all dry ingredients in a bowl
  3. Temper the dry mix with part of the hot juice
  4. Stir fast with whisk to avoid clumping
  5. Return to pot, keep stirring until starch is cooked. It should be thick and clear (semi-transparent)
  6. Transfer to bowl and add cherries. Fold in gently

Notes:
  • Sour Cherries is the best kind to be used for fillings
  • If lumps are present after thickening, mix with immersion blender
