Mealy Pie Dough
Ingredients:
- Water
- Pastry Flourt
- Sugar
- Salt
Shortening
Procedure:
- Add sugar and salt to water. Reserve
- Cut the shortening into the flour (no chunks) aprox 2 minutes
- Add water to the mix, combine-fold with scraper for about a minute
- Wrap and reserve in fridge
Notes:
- Mealey has less water than Flakey
- It's used for the bottom as it doesn't absorb liquids (no soggy bottom)
- Comes together quicker
- Chunks of shortening shouldn't be a concern
- Wear gloves
- Don't use water to clean hands
