Mealy Pie Dough

 Ingredients:

  • Water
  • Pastry Flourt
  • Sugar
  • Salt

Shortening


Procedure:

  1. Add sugar and salt to water. Reserve
  2. Cut the shortening into the flour (no chunks) aprox 2 minutes
  3. Add water to the mix, combine-fold with scraper for about a minute
  4. Wrap and reserve in fridge

Notes:

  • Mealey has less water than Flakey
  • It's used for the bottom as it doesn't absorb liquids (no soggy bottom)
  • Comes together quicker
  • Chunks of shortening shouldn't be a concern
  • Wear gloves
  • Don't use water to clean hands
